Do you appreciate a fine wine?
Get your palates ready to swirl, smell and taste at our upcoming wine pairing night! This is an intimate, smaller-scale dining experience, available exclusively to people who like the finer things in life.
The evening will be hosted by Sommelier, Mark Protheroe at The Paradise Valley Hotel – a historic, stylishly restored dining establishment in the Dandenong Ranges. Its boasts beautiful gardens, unique dining spaces and traditional food with a refined modern edge. The venue is run by Mark Protheroe, Steven Nelson and Joe Durrant who also run the North Fitzroy bistro ‘The Recreation’. I have included a bit about Mark below.
Wines will be specifically-paired with each meal to complement the dishes served for the ultimate food and wine journey. As a sneak peak, I can reveal that there will be Hervey Bay Scallops with parsnip, bottarga butter and lemon breadcrumbs. Pappardelle with mushrooms, garlic, spinach, cream parmesan. Slow roasted lamb shoulder with pearl cous cous, harissa, garlic, yoghurt and rocket. Pear Tarte Tatin with vanilla bean ice-cream for dessert …. yum!
Guest arrival is 6.30pm for a meet/greet and mingle. Dinner will commence at 7.00pm, when guests will be served the first course and wine match. The dinner will conclude at 9.00pm, with a further 30 minutes to chat and enjoy a tea or coffee. Guests are welcome to move to the bar area for further opportunity to mingle and continue the evening afterward.
The total price for this event is $135.00 per person, inclusive of all food and beverages served during the dinner and tea and coffee to follow. Additional drinks served prior to or following the event are available at bar prices.

Mark grew up in regional NSW with a passion for great tasting produce, wine and the hospitality industry. He has years of experience in varying hospitality formats, including cafes, fine wine stores and at three Michelin starred institutions. His journey has included working in regional NSW, Melbourne, England and Scotland. His most recent role was with a leading group of fine dining restaurants as Head Sommelier for six years. Marks talents have been recognised in The Age and Gourmet Traveller. He has also competed as a sommelier at the World Titles.
